Enzo’s Hideaway is bringing back its Bootlegger’s Dinner at Disney Springs on Thursday, December 10, and this one is all about whiskey. The five-course dinner pairs Italian dishes with WhistlePig, the Vermont rye whiskey maker, including two pours from its Boss Hog series, and tickets are $276 per person for guests 21 and over.

The dinner runs from 6 to 8 p.m. at the speakeasy-style restaurant in The Landing at Disney Springs. WhistlePig brand educator Ingrid Rodriguez, the current president of the United States Bartenders’ Guild, will lead guests through each pour and pairing. The ticket price already includes the 20% gratuity, so the number you see at checkout is the number you pay. That all-in pricing follows new Federal Trade Commission rules on showing fees up front.

The Five-Course Menu

Most of the pairings are built as cocktails rather than served neat. The night opens with WhistlePig PiggyBack 6 Year Rye mixed with lemon oleo, orange bitters and champagne, alongside Crudo e Caviale: Mazara del Vallo red prawns with Russian Osetra caviar, lemon and Lorenzo No. 5 olive oil. The second course is a board of cured meats and cheeses with mostarda, crostini, house focaccia and whipped lardo, paired with WhistlePig 10 Year Small Batch Rye with a golden grape infusion, Dolin dry vermouth and cherry bitters.

The third course is the centerpiece of the night, and the one place the whiskey stands on its own. Two Boss Hog editions, “Feather & Flame” XII and “The Golden Pharaoh” XIII, come with house-made paccheri in a milk-braised wild boar ragù with Roman spices, pecorino Romano, olio verde and fresh white truffle.

Course four brings A5 Japanese wagyu with roasted squash, mushrooms, a bourbon-maple demi-glace and fresh black truffle, paired again with the 10 Year Small Batch Rye, this time with a brown butter wash, black walnut bitters and WhistlePig barrel-aged maple syrup. Dessert is a caramel whiskey custard with cinnamon oat streusel, spiced apple compote, white chocolate whipped ganache and a caramel tuile, finished with a final PiggyBack 6 Year cocktail made with cream, brandy, oat milk and Angostura bitters.

Guests who want one more can add an optional supplement of WhistlePig “Beholden” 21 Year Single Malt. Rye carries most of the night: the PiggyBack 6 Year opens and closes the meal, and the 10 Year Small Batch is poured twice.

Good To Know Before You Book

Reservations are handled through Enzo’s Hideaway’s Tock page, where the December dinner is listed with limited spots. It is a one-night event. The full pairing menu is out now.

Enzo’s Hideaway has built this year’s Bootlegger’s Dinners around tequila, bourbon and rum, so a full night of WhistlePig rye is new territory for regulars. If you are planning a December trip around Disney Springs, the dinner lands right in the middle of the holiday season, and the rest of the resort’s festive food is already out in the Disney World holiday foodie guide.
